Egg Sandwiches

Sandwiches are ideal pub fare, simple to prepare, universally liked, and highly profitable.

Try some of the ideas listed below to bring novelty and visual appeal to your sandwich display.

Basic Sandwich Mixture

Fills 10 sandwiches

8 medium Lion Quality eggs, hard-boiled
100g (4oz) butter
Salt and pepper

Chop the eggs.  Cream the butter until soft and then mix in butter and seasonings.

Sandwich between the slices of bread.

To bring variation in taste and texture add any of these items to the basic mixture:

Chopped chives, grated cheese, diced celery, ham, smoked bacon pieces, flaked tuna fish or canned salmon, curry paste or sauce, mayonnaise or sweet pickle.

Use this mixture to fill single and double decker sandwiches, toasted and club sandwiches and rolls with one or two cuts.

Egg Mayonnaise Open Sandwich

For an attractive open sandwich, make several cuts part way through a whole hard-boiled egg and fan egg slices.  Place a lettuce leaf on the buttered bread slice and position the egg on top of this.  Pipe a decorative border of mayonnaise over the egg.  Sprinkle chopped parsley over sandwich.  Serve with a knife and fork.

Scrambled Egg Pizza

15cm (6”) piece of French bread
2 tablesp. Tomato chutney
2 medium Lion Quality eggs, scrambled
50g (2oz.) cheese, grated

Cut bread in 2 horizontally.

Spread each piece of bread with tomato chutney.

Spoon scrambled eggs along the length of each piece of bread.

Sprinkle with grated cheese.  Place under grill until cheese melts.

Serve hot.

Alternatively, top each pizza with a bacon rasher instead of cheese.
