The Quiche
Hot or cold, a freshly homemade quiche tastes delicious. Using bacon and cheese, or salmon and asparagus, it can be made simply or elaborately according to your customers' tastes.
To simplify production, use frozen or packet short crust pastry. Prepare flan bases in batches and freeze for later use. As a guideline the basic quantities are listed below:
Ingredients - 10 Portions
Pastry, prepared short crust 450g(11b) 3 medium Lion Quality eggs, beaten
Milk 375g(10oz)
Solid ingredients (eg egg, cheese, or bacon) 275g (10oz)
Seasoning, to taste
The quiche should be backed in a moderate oven, gas mark 6, 200C, 400F for about 30-35 minutes until pastry is cooked and the filling is just set.
Variations
Pastry: Use cheese, herb or wholemeal.
Fillings: Try ham and sweet corn, canned salmon and courgettes, smoked mackerel and olives, cheese and onion, chicken, mushrooms and chives.
