Muffin Burger

Serves 10

Ingredients

2 1/2oz/65g butter or low calorie spread
10 muffin, plain or wholemeal –split in half and toasted
10 medium Lion Quality eggs
A little oil for frying
1 round lettuce, washed and drained
2 Sliced tomatoes
1⁄4 cucumber, sliced
5 tbsp corn or tomato relish

Method

Spread the muffins with a little butter. Fry the eggs over a gentle heat taking care not to overcook them otherwise they will become tough and crisp. Baste the eggs with a little oil and cook until the white is just set and firm. Fill each muffin with the lettuce, tomato, relish, and top with the fried egg. Serve at once.
