Sunny Potato Eggs

Makes 10

Ingredients

10 Ready cooked or microwave hot cooked jacket Potatoes
10oz/275g strong Cheddar cheese (grated)
5 medium Lion Quality eggs, beaten
A dash of Worcestershire sauce to taste
20oz/50g butter or low calorie spread (melted)
Salt and freshly ground pepper
4 spring onions (toped tailed and chopped)

To Garnish

A little freshly chopped parsley.

Method

Core the tops off the potatoes. Scoop out the flesh and mix with the remaining ingredients. Pile mixture back into the potato jacket and reheat in the microwave 2 mins for two on full power or in a reheated oven at gas mark 6, 200C for about 20 minutes.
