Dreamy Curried Eggs
Serves 10
Ingredients
1 quantity of creamy mayonnaise
3-4 tbsp mild-medium curry powder or paste
2-3 tbsp mango chutney, finely chopped
10 medium hardboiled Lion Quality eggs, shelled and sliced in half
1⁄2 round lettuce
1x13/4/50g can anchovies, drained, with each fillet cut in half lengthways
Method
Blend the mayonnaise with the curry powder, and chutney until smooth. Taste and adjust seasoning. Cut the eggs in half lengthways with a wet knife blade. Place the halves in pairs rounded side upwards on a bed of lettuce or a bed of freshly cooked rice. Coat the eggs with the mayonnaise and garnish each half egg with a cross-made from anchovy fillets.
