Soufflé Ham Sandwich
Serves 10
Ingredients
10 slices toasted bread or crumpets
10 slices lean ham
A little ready-made mustard
10 slices of cheese
4-6 tomatoes, sliced
10 medium Lion Quality eggs, separated
Salt and freshly ground black pepper.
Method
Preheat the oven to marked 4, 180C, 350F. Place a slice of ham onto the toast spread with a little mustard. Top with the cheese and tomato; whisk the egg whites up until very stiff in a grease free bowl. Season and fold in the mixture evenly onto the toast. Bake on a baking try until well-risen and golden brown serve quickly.
To Vary
Beef: Replace the ham and mustard with sliced beef and horseradish sauce.
