Lion Quality Egg Products
Egg products are becoming increasingly important to caterers for both convenience and food safety. There is a separate Code of Practice for Lion Quality egg products, which offers caterers all the benefits of Lion Quality shell eggs, along with wide-reaching food safety and product quality measures to cover the processing of Lion Quality eggs.
The British Egg Information Service recommends that caterers use pasteurised Lion Quality egg products in all recipes featuring raw eggs.
